  1. Ponemos el arroz integral en remojo como unos 30 minutos.
  2. En un bol ponemos el tofu cortado en tacos con el macerado, el mismo tiempo que el arroz.
  3. Ponemos la paella al fuego con un chorrito de aceite de sésamo y una pizca de sal, y añadimos la verdura menos los guisantes.
  4. Cuando empiece a dorar, añadir el tomate triturado que hemos preparado con ajo troceado y jengibre picado y las demás especias. Añadimos el tofu marinado. Lo cocinamos un poco y añadimos el vino, dejamos que evapore el alcohol.
  5. Añadir el arroz y sofreír un poco, introducir el caldo de verduras, el colorante y cocinar durante 15-18 minutos, cuando falten unos 5 minutos para terminar la cocción añadir los guisantes. Rectificar de sal.
  6. Apagamos el fuego y dejamos reposar unos 10 minutos. Haced el aperitivo mientras. Yo de aperitivo he preparado unos pimientos piquillo, pepinillos, espárragos blancos, aceitunas partidas, espolvoreado con cilantro, albahaca, pimienta, aceite y una pizca de sal.
