  1. Lo primero que hay que hacer Es poner una olla a presión la carne y freírla por todos los lados con 2 dientes de ajo.
  2. Una vez, frita la carne, ponemos en la misma olla agua hasta cubrir los trozos de carne, y añadimos la hoja de laurel. Tapamos la olla y cuando empiece a soplar por la válvula de seguridad, contamos 40 minutos
  3. Mientras se cuece la carne vamos partiendo los pimientos y la cebolla en trocitos pequeños, y ponemos a fuego medio, para no quemarlos, en un sartén con aceite de oliva. Trituramos un tomate y reservamos.
  4. En un mortero, preparamos un majao, con un diente de ajo, perejil, y vino blanco un chorrito.
  5. Cuando la cebolla esté transparente, añadimos el tomate triturado, el pimentón, la pimienta, la sal y el majao, sobre unos unos 5 minutos, hasta que evapore el alcohol del vino. Tercera foto.
  6. Cuando allá, pasado los 40 minutos, dejamos que pierda la presión la olla, y sacamos la carne para desminuzarla, cuidado que quema deja que enfríe un poco.
    El caldo lo reservamos para más adelante.
  7. Cuando esté la incorporamos al sofrito removemos y mezclamos bien, durante unos minutos.
  8. Ahora, cuando esté todo mezclado vamos incorporando el caldo que hemos hecho al cocer el conejo y el pollo, procura colar el caldo por si quedar algún huesecillo suelto.
    Lo cocinamos sobre unos 10 minutos.
    Ve probando, el caldo y rectifica de sal en caso de ser necesario.
  9. Cuando allá evaporado la.mitad más o menos del caldo es el momento de incorporar la pasta manchega de gazpacho.
    Le vamos dando movimientos suaves y céntricos para no romper las pastas, lo dejamos cocinando unos 5 minutos.
  10. A mí me gusta servir el gazpacho al centro de la mesa en la misma paellera o sartén que lo elaboreis.
